Where It All Started

Founded in 1917 by Thomas Brilotti, the company was taken over by his son Pascal — the beginning of a true family legacy. For decades, the Brilotti family poured themselves into growing the company, guided by hard work, tradition, and an uncompromising standard of quality.

The First Succession

In 1996, Charles Roy acquired the business and led it with great care, preserving the integrity and reputation of this beloved Montréal institution.

The Second Succession - T.Brilotti today

In 2025, Ernest Di Zazzo — Pascal Brilotti’s son-in-law — proudly carried the torch forward with one clear goal: to honour this remarkable heritage while raising the bar in every detail.
